How I cook at home is very inspired by the dishes I grew up eating. This soup has many points of inspiration from Tuscany to Louisiana. This is one of my "go to recipes" when well, you know the feeling. Super busy. A bit stressed. About a bajillion different todo's and life events descending upon you all at one time. This sure to satisfy and impress, hearty and healthy rustic recipe is incredibly easy to make, featuring kale, sausage, and white beans.
Jeramie's Kale, Sausage & White Bean Soup
SERVINGS | 6-8
TOTAL TIME: 1 hour 20 minutes
• 1/2 pound turkey sausage, sliced
• 2 Tablespoons olive oil
• 1 Tablespoon red chili flakes
• 1 large yellow onion, chopped
• 3 garlic cloves, minced
• 1 pound lb kale trimmed and chopped
• 2 pounds red potatoes - sliced into thin rounds
• 1 pound white beans, cooked
• 8 cups chicken broth
• salt and pepper to taste
Bring broth and kale to a boil with a pinch of salt.
Cover and simmer for 30 minutes or until tender.
In a skillet over medium heat add turkey sausage.
Render until sausage is caramelized. remove from pan.
Add olive oil, onion and garlic.
Saute until onions are translucent.
Add a cup of the kale broth to deglaze the pan.
Then transfer the pan with onions and garlic to the kale and white beans.
Cook for 10 minutes.
Add the potatoes and cook for another 10 minutes or until the potatoes are tender.
You can top soup with cheese or crusty delicious cheese toasts.
This hearty soup is even better the next day!
