The Strawberry Ichigo
YIELD: 1 cocktail / single serving
• 1.5 oz house infused Strawberry Jalapeño El Jimador Tequila
• .5 oz triple sec
• .5 oz fresh lime juice
• .4 oz house made simple syrup [recipe below]
Combine all ingredients in a cocktail shaker with ice.
Shake and pour into a glass with a sugared rim.
Garnish with a strawberry and fresh jalapeño slice.
Strawberry-Jalapeño infused Tequila
• 1 Bottle of Silver Tequila
• 2 quarts strawberries
• 2-3 jalapeños
Pour tequila into an airtight container, preferably glass
Hull and roughly chop the strawberries
Slice the jalapeños into thing rings
Add the starberries to the tequila and muddle
Add the sliced jalapeños and stir.
Seal and refrigerate for 1-3 weeks.
Strain and return infused tequila to clean airtight container.
• 3 cups sugar
• 3 cups water
Combine 3 cups water and 3 cups sugar in medium saucepan.
Stir sugar and water over medium heat until sugar dissolves. Increase the heat and bring to a boil.
Reduce heat to medium and simmer 3 minutes.
Transfer syrup to airtight container and chill thoroughly.
Syrup can be made 2 weeks ahead.
Cover and keep refrigerated.
