Jaxson Fearing, age 17 is a junior at Jesuit. He loves to make crepes and loves to experiment with different fillings, but his favorite is with chocolate chips and bananas. The following is Jaxson's recipe for a healthy and hearty scramble. We hope you enjoy!
The Jaxson Football Scrambler

Total time: 40 mins
1/2 cup chopped roast beef
1/2 cup chopped turkey
1/2 cup ham
1/2 cup sausage
1 onion, diced
1-2 dashes hot sauce (Chululua),
1/2 cup Arugula, fresh
1/2 cup Spinach, fresh
Cheese (Monterrey Jack or Sharp Cheddar)
Sautee onion in a skillet with a little butter and oil until soft.
Add the sausage, and brown.
Add beef turkey and ham and stir.
Beat the 8 eggs together with some salt and pepper and add to onion and meat mixture.
Before eggs are set, stir in spinach and arugula and stir lightly to combine and allow greens to wilt.
Add the Hot Sauce.
Pour into small casserole dish and spread cheese across the top.
Place in oven under the broiler and cheese is melted and just begins to brown.
Remove from oven, taste to season and add a drop or two more of hot sauce.
